At the heart of the project are chefs Germán Carrizo and Carito Lourenço—a passionate couple whose dream has materialised in a space that grants them complete creative freedom. Drawing from their formative years within the Quique Dacosta group, and inspired by Carito’s Argentine roots, their cooking also weaves in subtle influences from Spain and Italy, creating a rich and multilayered Mediterranean narrative.
The experience is centred around two meticulously composed tasting menus—Evocación and Emoción—each available with thoughtful wine pairings. A fully vegetarian menu is also offered (advance notice recommended), all sharing the chefs’ core vision: to build the “taste memory of the future.” Precision, emotional resonance, and a deep respect for seasonality define the cuisine.
