Kaikaya
In 1908, the Kasato Maru docked at the port of Santos, bringing the first Japanese immigrants to Brazil as laborers for the coffee plantations, following a bilateral agreement between the two nations. Japanese cuisine, with its unique ingredients and preparation methods, was vastly different from the Brazilian diet. Yet, the newcomers had no choice but to adapt, using local foods for sustenance.
Fortunately, Brazil was rich in fish, rice, fruits, and vegetables—an abundance that eased the blending of two culinary worlds. Out of the need to merge local flavors with Japanese tastes, creativity flourished. Thus, Nikkei cuisine—Nipo-Brazilian gastronomy—was born. Over more than a century, it has developed a distinct identity and gained worldwide recognition.
Two vastly different cultures were brought together, merging their ingredients, techniques, textures, and colors to create something entirely unique and deeply flavorful.
Kaikaya is the embodiment of that journey—bringing to the heart of Valencia a fusion of Japan’s refined tradition with the tropical vibrancy of contemporary Brazil. Our cuisine is rooted in history, reflected both in the design of our space and in every dish we serve.
