The creative force behind the kitchen is María José Martínez, affectionately known as the “honey chef,” whose modern Mediterranean cuisine is a celebration of the region’s seasonal bounty. With support from her husband Juanjo Soria in the dining room, Martínez crafts dishes that pay homage to the local market gardens, mountains, and sea, showcasing ingredients with precision and elegance.
Her culinary language is one of detail and balance, where exquisitely composed sauces and delicate textures play a starring role. A distinctive hallmark of her cooking is the subtle, intelligent use of apicultural elements—honey, pollen, and honeycomb—infused into select dishes, adding depth and nuance. Guests can choose from three thoughtfully curated menus: the Trazos executive lunch menu available midweek, and two tasting menus—Pinceladas and Lienzo—that offer a more immersive experience.
