Fraula
Just steps from the iconic Mercado de Colón—a jewel of Valencian Modernist architecture—Fraula offers a serene, minimalist-contemporary setting that balances refined aesthetics with warm hospitality. The restaurant takes its name from the Valencian word for “strawberry,” a nod to both local identity and the chefs’ passion for the land’s seasonal offerings.
At the helm are chefs Roseta Félix and Daniel Malavía, whose collaborative approach extends beyond the kitchen. Their personal connection with guests is palpable, as they alternate between leading the pass and making appearances in the dining room, adding a human touch to the experience. The cuisine at Fraula is rooted in modern sensibility and crafted with precision, drawing heavily from the region’s fertile market gardens.
Three thoughtfully composed menus are available: Cebera, a concise lunch offering available midweek, and two tasting menus—Alfàbega and the signature Fraula—which explore the depth of the chefs’ seasonal creativity. Standout dishes include a delicately spiced Thai shrimp and, most memorably, a refined preparation of free-range pigeon served in multiple expressions: roasted breast, a hearty stew, and two tender ravioli accompanied by blackberries and cappelletti—an eloquent demonstration of technique and imagination.
